Ingredients

1 onion

1 courgette

1 red pepper

1 aubergine

Tomato sauce

Olive oil

1 egg

Vinegar

Maxorata semi-cured cheese with paprika

Recipe

Dice the vegetables and fry on a high heat. Add the onion and the pepper fi­rst followed by the courgette and the aubergine.

Season with the tomato sauce and add the grated cheese.

Poach the egg in water and vinegar.

Place on the ratatouille on the plate, place the egg on top and decorate with grated cheese.
