Odour: Lactic, characteristic of ewe’s milk

Flavour: Medium intensity with hints of milk

Colour: White with a slight ivory shade

Texture: ELow elasticity, with a buttery, creamy feeling

Rind: Yellowish colour

Ripening: between 20 and 60 days

Shelf life: 9 months after packaging

Odour: Intense and persistent

Flavour: Intense and tasty, with a persistent after taste reminiscent of dried fruit and nuts and hints of sweetness

Colour: Ivory-yellowish

Texture: Low elasticity, with a buttery feeling. The more ripe cheeses are somewhat grainy

Rind: Brown

Ripening: over 60 days

Shelf life: 12 months after packaging
